here is one for another day. it's one of my favorites...
CHICKEN AND PORKPAELLA
INGREDIENTS:
1/3 cup diced red peppers
3/4 cup sliced mushrooms
1 1/2 teaspoons garlic
1 tablespoon lemon zest (fresh or dried is fine)
2 cups diced tomatoes
1 teaspoon rosemary
2 teaspoons parsley
1/4 teaspoon tumeric
3/4 cup cut green beans (frozen or fresh)
2 cups chicken broth
2 cups white rice
1/2 cup diced cooked chicken
1/2 cup uncooked chorizo/sausage ( I found Jones all natural sausage with no nitrates has been the best for us) . it's in a white and roll near the jimmy dean sausages.
In a skillet add 1 tablespoon oil and the chorizo. Cook for about 5 minutes or until golden brown on all sides. Add the red peppers, mushrooms, garlic and tomatoes to the pan and cook for 5 more minutes. Add the rice, lemon zest, parsley, tumeric and chicken broth and stir briefly. Reduce heat to a simmer, cover and let cook for 30 minutes or until all the liquid has been absorbed. Once absorbed, top with the chicken and green beans. Cover and let stand for 10 minutes or until the chicken and green beans are hot. mix together before serving.
NOTE: there should be a crust on the bottom of the pan.
