im asian so u can ask me ^^
we usually add eggs to it. you mix the egg until its all yellow and then you cook it and then cut it into strips. Also its common to put spinach or well done steak or some type of meat in it (no not like ham meat) you can also add carrots
cream cheese or sprouts is always nice
add some seeweed

You can make a type of Tuna salad - to 1 pouch tuna add sesame oil, lemon pepper and then add fresh coriander as you roll, cream cheese combined with salmon with strips of fresh tomato and red onion are good my daughter loves strips of beef and bell pepper - cooked sushi rolls are pretty flexible so as long as you enjoy the taste or think it will go well with the rice it's a good choice.
