I've been told by someone who works in the cheese business that those spreads are made from second-grade cheese (cheese that has not made it to the top grade for quality, but is still usable.) It's formulated with other ingredients and likely a few chemicals (colouring, etc.)

I'm pretty sure it's a cheese flavored process, but that doesn't stop me from breaking out the cheddar every once in a while. Put it on top of Ritz crackers with an olive, or onion pearl -- very '70's!
