A mouthful of warm creamy broth
I have fallen asleep in the veg department at Tesco again
very finely chopped with some celery... fried off in a little butter, add rissotto rice and gently heat in the fat until translucent, add a couple of glugs of vermouth, stur until largely absorbed, then add decent quality chicken stock - a ladle full at a time - stirring all the while. As the rice absorbs the stock, add another ladle full... and KEEP stirring
keep adding untill the rice is cooked (bite, but not chalky)
stir in a decent handfull of parmesan, and some chopped flat leaf parsley. Take off the heat and cover. leave to stand for a minute of two...
and there you are - a near perfect Risotto!
