Green olive = 'immature' and usually soaked in a salty brine
Black olive = 'ripe' and usually cured in oil

well, I bought a pasta salad yesterday in a plastic container, and it has both!. It has taught me that I greatly prefer green olives!.Www@Enter-QA@Com
