It does two things:
It lowers the freezing point!. If water freezes in the engine, say over a cold night while parked, it expands and could crack the engine block, heads or radiator!.
It increases the boiling point of water!. For water to cool and engine it has to remain liquid!. If it starts to boil, bubble it turns into steam!. It will not cool since it is not a liquid in contact with the metal engine block!.
Antifreeze is Glycol!. It is the chemical compound widely used as an automotive antifreeze!. In its pure form, it is an odorless, colorless, syrupy liquid with a sweet taste!. Ethylene glycol (full name) is toxic!. Glycol is poisonous if injested, but it's sweet tasting to an animal!. Keep it way from animals, because they will drink it and kill them!.

Antifreeze is an engineered liquid, who's freezing point is so low that it reduces the freezing point of any liquid it is added to!. Thereby expanding the temperature range in which that liquid is useful!.
