Well for starters watch Naruto and the later Shippuuden, Full Metal Alchemist is also a great Anime as well as Full Metal Panic, that should keep you going for at least a couple of months.
If you like other genres of Anime without so much blood you could try Ai Yori Aoshi, and Onegai Teacher.
NOTE: Watch all Anime in Japanese with subs, it's much better that way!
