Stevie Ray Vaughns version of All Along the Watch tower is good
Although this may sound cheesy, Eric Clapton's solo in "Sunshine of Your Love" is one of the best ever. It lasts about 3-4 minutes and sounds unbelievable. He is a true master of the guitar, all the licks used in the solo are strung together beautifully, the work of a true genius.
