Answers:
Progressive/Technical Death (A la Symbyosis, Kalisia, Persefone, Psycroptic etc) and Avant-Garde (A la Ram-Zet, Sigh, Arcturus etc)!.
It just tends to be more interesting and different!. Great muscianship, with chromatic scales and discordant melodies mixed with jazzy druming, polyrhythms and syncopated beats!. Usually you get some cool musical accents like OTT keyboards and choirs to, which is fun!. And it also incorporates other styles as well, so you get a healthy of mix genres in the one area!.Www@Enter-QA@Com

One of my favourite metal bands is Meshuggah, and they classify themselves as experimental death metal!. Some call them Avant-garde metal!.
Their music mixes elements and influences from a wide variety of genres such as thrash metal, death metal, jazz fusion, and math rock!.
I don't particularly like a specific sub-genre of metal, but the whole Avant-garde/experimental death metal is good, especially the use of polymetric drum beats!.
For example, in the main riff of the song "New Millennium Cyanide Christ, Haake (the drummer) beats a rather slow 4/4 rhythm with his hands, while the bass drums and guitars play a repetitive 23/16 rhythm pattern on top of it!. As the subdivided pattern is repeated, the pattern's accents shift to different beats on each repetition!. After repeating the 23/16 pattern five times, a shorter 13/16 pattern is played once!. These patterns sum up to 128 16th notes which equals exactly 8 measures in 4/4 meter!.Www@Enter-QA@Com

It's hard to say because subgenres and bands are so disputed nowadays!.!.!.but I'll try!.
metalcore - UnderOATH [some!.material]
death metal - job for a cowboy [new!.album!.genesis]
deathcore - emmure && UNDEROATH [older!.material]
-BTW-
Mathcore is a genre with complex and intense signatures
"Mathcore music is usually filled with discordant, technical riffing, complex time signatures and song structures, and passionate, energetic vocals!. Songs played by bands of this style tend to vary from seconds in length to over 15 minutes and rarely feature a conventional verse-chorus song structure"Www@Enter-QA@Com

I don't have a favorite sub-genre and I listen to bands across all of them!. When I was young, all these sub-genres did not exist so I take the same mindset now and just listen to bands regardless of where someone else thinks they should be categorized!. To me it's just metal!.Www@Enter-QA@Com
