I know it sounds corny, but I really love Tschaikovsky's "Waltz of the Flowers" from the Nutcracker!.!. The second theme in the violins in thirds gives such a lush sound with such simple means -- very effective scoring!.
In the trio, when the 'cellos play that appassionato theme with the throbbing strings accompanying -- it is inspired writing!.
I also love the a minor waltz of Chopin -- the one that begins with the melody in the left hand!. (opus 34 #2)
